Key properties
How to use
Chocolate making
Inclusions in bars and truffles for crunch and texture contrast. Grind in a melanger to produce your own cocoa mass from scratch, bean-to-bar. Where that route sits against buying finished couverture: bean to bar vs couverture to bar.
Baking
Replace or combine with chocolate chips in cookies, brownies, and muffins. Less sweet, more intense chocolate hit.
Smoothies and bowls
Add to smoothies, porridge, yoghurt, and acai bowls for crunch and cocoa flavour.
Snacking
Eat straight. No added sugar, nothing else added.
Savoury
Crush into spice rubs and mole sauces. Garnish for rich, complex dishes.
Bulk and wholesale
Online to 20kg, quoted from 25kg. Every pack size from a 100g test pack up to 20kg is on this page and ships from Chelmsford, Essex. Above that, wholesale cocoa nibs are quoted against your specification, your format and the week, because a published trade price for cocoa is out of date within weeks.
One thing worth settling before you compare bulk quotes. Ask whether the nibs are roasted or unroasted, because the two are different products and the word cacao is used loosely.
No minimum on a first order. Qualify the nibs on 100g, scale up to 20kg online without speaking to anyone, and come to us for a 25kg quote when the volume justifies it.
For a wholesale cocoa nibs quote, email wholesale@cocoafoundry.co.uk or use the Wholesale page. Answered within 1 working day.
The Ghana standard
Ghana's cocoa-growing regions, Ashanti, Western and Eastern, produce beans with naturally rich flavour developed through careful post-harvest fermentation and sun-drying. Traditional methods. Deep chocolate character built in before the beans reach a processor.
All Ghanaian cocoa is regulated by COCOBOD, which grades and inspects every batch before export. Substandard or under-fermented beans don't make it into the supply chain. Buying Ghana cocoa nibs means beans that have passed one of the strictest national quality control systems in the cocoa world.
Why we exist
CocoaFoundry did not start with a business plan. Our family had been importing Ghanaian food products into the UK for years through the parent company, learning what actually goes wrong in a cross-continental supply chain and what it costs when it does. A customer asked us to find shea butter. The supplier who found it suggested we trial cocoa butter alongside it. One shipment, and the demand behind it did not stop.
Then an early batch of cocoa butter did not meet the standard our customers needed. We pulled every unit, took the loss, and went back to the beginning. That decision is the reason we buy the way we do now. It earned us a direct purchasing relationship with our partner facility in Tema, one of Ghana's leading cocoa processors, with no broker, no trader and no third-party warehouse between their line and our hub in Chelmsford.
That is the whole proposition. You are buying from the people who hold the relationship, not from a link in a chain, so the beans, the facility and the specification stay the same order after order. Family-run, and when something goes wrong we fix it and absorb the cost rather than pass it down the line. More on how we got here.
The detail
What Are Cocoa Nibs?
Cocoa nibs are small, broken pieces of cocoa beans, the purest form of chocolate you can eat. After fermentation, sun-drying and roasting, the bean is shelled and cracked into irregular fragments. Crunchy. Deep, bitter chocolate flavour. No added sugar.
Contains naturally occurring cocoa flavanols. Minimally processed, with nothing added.
Not sure which form of cocoa your process needs? Which CocoaFoundry product is right for you compares nibs, mass, butter and powder side by side.
Quality & Sourcing
Heavy metals. SGS tested samples of our cocoa mass and natural cocoa powder: cadmium below 0.3 mg/kg, lead and arsenic below 0.1 mg/kg. Nibs were not tested, though the results are a reasonable guide for them, as all three come from the same origin material. Cadmium in cocoa comes from soil geology at the growing region rather than from processing, which is why origin matters.
COCOBOD-certified origin. Sourced direct from Ghana. Specification available on request.
